Vivai Dine & Lounge is a Mediterranean restaurant located in the westernmost part of the Seminyak Square, a dining and shopping complex in Bali’s Seminyak area. The dining venue features an open-sky rooftop garden terrace, offering a mild escape away from the crowded streets of the vicinity.

The establishment offers fresh and affordable cuisine, sparkling drinks and a rooftop dining experience with a spectacular view. With strongly influenced Mediterranean combined with Bali’s finest organic ingredients, Vivai also features a combined lounge and martini bar to supplement its dining features.


Highlights and Features of Vivai Dine & Lounge

Vivai’s kitchen produces a blend of Mediterranean-style cuisine with Bali’s freshly sourced ingredients, and uses fresh catches of the day. Chef Dean Fisher helms the kitchen and contributes to the selections served at the restaurant, inspired by a summer he spent as a boy in the family holiday house in Maria, Southern Spain, which introduced him up to Mediterranean cuisine.

In 2010 Dean met Luigi Gerosa, then Executive Chef of Burj Al Arab. The two decided to team up and head the kitchen at Vivai. From these two maestros, Vivai’s menu features delicious seafood servings such as the Vivai seafood salad, char-grilled deep water squid, pacific strait sardines and grilled king prawns pil pil (with Marakesh spicy remoulade and lemon wedges).

The desserts list come with full indulgences such as the Vivai sorbets featuring mango malabo, orange Cointreau, water melon vodka, red dragon rum, with rambutan and coconut. Other lavish dessert selections include chocolate, orange and whiskey cheesecake served with cumquats sorbet and mascarpone chocolate mousse, and strawberry blancmange served with rambutan semifreddo ice cream.

On the refreshing signature beverages list are the Colonel Collin’s (bourbon whisky, a sweet and sour mix topped with soda water), and brut ice tea (vodka, gin, triple sec, sweet and sour and sparkling wine brut). Vivai’s long drink list mixes old favourites and the new, from Singapore sling, pina colada and margaritas. The Martini Bar serves tempting selections such as the chill-out martini and the refreshing apple melon martini.


 

Good to Know about Vivai Dine & Lounge

Vivai also hosts cooking classes led by its own Chef Dean Fisher. As Bali is an exotic culinary playground, Dean Fisher takes guests to explore Bali’s traditional markets, farms and plantations where ingredients are sourced and produced.

The cooking class is a unique experience to catch a glimpse into the heart of Bali's fishing community. Participants can watch fishermen land their catch at Jimbaran Beach and explore the wet market. The island's wide variety of fruits, vegetables and spices at a traditional market is colourful and fascinating.

Back at the class, cooking skills are honed before indulging in your own gastronomic banquet lunch at Vivai Restaurant. The regular class menu comprises char-grilled deepwater squid, octopus and potato salad, Valencian seafood paella, Sulawesi king prawns with saffron hollandaise sauce, chef's saucy chili crab, mixed shellfish platter and sea bream baked in Bali's volcanic salt and served with French fries and lemon hollandaise sauce.

Vivai also features a DJ booth located a distance from the dining area, and Friday nights have a party mood, with the night being a Ladies’ Night with discounts on food and drinks. Most other days feature various deals as well. Vivai is open for dinner. Reservations are recommended.
