Those up for something with a hint of Malay Peranakan heritage cuisine can opt for the beef cheek massaman curry, with caramelised coconut cream and red paste, which gives this dish a full-bodied nutty flavour to add to its tender and rich beef curry. These innovative takes on classic dishes are created by Executive Chef Nicolas Lazzaroni, a well-known figure in Bali’s dining scene, who has a reputation for successful fine-dining establishments and five-star resorts island-wide, with the likes of Bridges Bali and Uma by COMO (both in Ubud) and Settimo Cielo in Seminyak to his name.
